Carrots and Cardamom Jam

Carrots make a compote with a bold color and spicing it with cardamom seeds gives it an exotic touch to this delicacy.

It's a carrot compote (that does not taste carrot!) with a strongly citric touch. Goes well with a single toast, when applied in a light layer. It goes well with cheese and can even be presented as an appetizer for fine dining.
